Raclette recipes: the classic and pan ideas for every season
Updated: 1 November 2026
Short answer: for the classic raclette for 4, Swissmilk uses 800 g of sliced raclette cheese and 800 g of potatoes boiled in their skins, seasoned with pepper, paprika and raclette spice, with gherkins and silverskin onions on the side [1].
The classic: raclette for 4
Swissmilk works with these amounts for 4 portions [1]:
- Cheese: 800 g raclette cheese, already sliced
- Potatoes: 800 g Gschwellti (potatoes boiled in their skins), brought to the table hot
- To season: pepper, paprika and raclette spice
- Something sour: gherkins and silverskin onions
Time: 30 minutes. According to Swissmilk, one portion has 841 kcal, 56 g fat, 32 g carbohydrate and 50 g protein [1].
With Valais Raclette AOP, Swissmilk uses 800 g of cheese cut into portions, 1 kg of small potatoes boiled in their skins, and gherkins and mixed pickles. Melt the slices in the pan, push them onto the plate with the scraper and season to taste [2].
